Jason Graham, Executive Chef of Cal-a-Vie Health Spa, was just named one of the top healthy gourmet chefs in the nation. Co-author of the cookbook Cal-a-Vie Living: Gourmet Spa Cuisine, his tips and recipes will help you prepare incredibly flavorful, yet healthy dishes to dazzle family and friends.

Jason is a creative genius when it comes to healthy eating. One bite of his natural cuisine, which uses fruits and vegetables, whole grains and a number of other culinary secrets, and you will be satiated and energized, You will also be shocked to find that it's considered healthy.

Chef Graham's menu highlights fresh, regional produce, selected at its seasonal peak, unprocessed whole grains, fresh fruits and vegetables, essential fatty acids and lean proteins. Ingredients are carefully prepared and artfully woven into mouthwatering masterpieces, proving that simple, healthy eating can be elevated to a gourmet status.


GORGONZOLA CHEESE GOUGÈRES


3 tablespoons butter
¾ cup water
¾ cup unbleached flour
1 egg
3 egg whites
½ cup loosely packed crumbled gorgonzola cheese

Yields 40 gougères

  • Preheat the oven to 425 degrees. Melt the butter with the water in a saucepan over low heat. Bring to a boil and add the flour all at once, stir r ing until the mixture turns into dough. Re move from the heat and let cool.
  • Beat in the egg and egg whites, one at a time. Fold in the cheese. Spoon into a pastry tube and pipe into 1-inch mounds on a parchment-lined baking sheet. Bake for 5 to 10 minutes or until puffed but not yet beginning to brown. Reduce the temperature to 350 degrees and bake for 10 minutes longer or until cr isp and golden brown.
