Every weekend is worth celebrating when you can relax over a good brunch. Food Network host, cookbook author, celebrated chef, and mother of three, Gale Gand has long made brunch a part of her life because it's the easiest way to gather around the table with family and friends.

WATERMELON GAZPACHO
Serves 4 to 6

The first time I hosted a dinner party was when my parents came to visit me halfway through my first semester of art school in Cleveland. I served tomato gazpacho, an easy soup made in the blender, and offered ingredients at the table to stir into the soup. I got creative and had things like cottage cheese, croutons, and popcorn, as well as the traditional vegetables like cucumbers and peppers. And I've been playing with different versions of gazpacho ever since. Here's the latest, thirtysomething years later. This watermelon version is somewhere between sweet and savory — perfect for brunch — and looks gorgeous in glass bowls or cups.


INGREDIENTS


4 cups watermelon cubes, seeds removed as much as possible

Sugar, to taste

½ cup diced seedless (English) cucumber

½ orange or red bell pepper, diced

1 green apple, cored and diced

¼ cup pomegranate seeds

½ cup cubed fresh mozzarella

Watermelon Gazpacho

Put the watermelon cubes in a blender and pulse briefly to puree, leaving some texture to them. Transfer the watermelon to a container with a pour spout. Taste, and sweeten with a little sugar if it's too tart.

To serve, pour the watermelon soup into clear bowls, glasses, or mugs. Garnish each serving with a bit of cucumber, bell pepper, apple, pomegranate seeds, and mozzarella. Alternatively, set the bowls of soup on a buffet, next to small serving bowls containing the vegetables, fruit, and cheese, and let people garnish their own soup.
